white tea leaf
how are there so many different kinds of black, white, green teas?

if the only difference is the time The Tea leaf is picked how can there be even more variety within each group Of Tea

There are many things that distinguish tea besides the harvest time. The conditions in which the tea is grown and the way it is cultivated will make a difference. Although they are all the same species, selective breeding makes tea plants with different characteristics. Different parts of the plant will yield different Types Of Tea – buds and young leaves for White Tea, for example. After the tea is picked, it goes through a number of processes – wilting, drying, steaming, oxidizing, rolling, sifting, etc. that are different for each variety of tea.
